HOT SAUSAGE & PEPPER SOUP

The Preparation

1.4 pounds hot Italian sausage
6 cups raw spinach
1 medium green bell pepper
1 medium red bell pepper
½ medium onion
1 can tomatoes with jalapenos
2 cups beef stock
2 teaspoons chili powder
2 teaspoons cumin
2 teaspoons minced garlic
1 teaspoon Italian seasoning
½ teaspoon kosher salt
The Execution

Rip sausage into chunks and cook it all the way through.
Add sliced peppers, tomatoes, beef stock, and spices to crock pot. Put sausage on top and mix it well.
Fry up your onions and garlic, add to crock pot when translucent.
Add bed of spinach on top, let cook for 3 hours on high.
Stir after 3 hours, set to low and cook for additional 2 hours.
Notes

This makes 4 large servings which comes out to: 385 Calories, 27g Fats, 6.9g Net Carbs, and 24g Protein.
