Potato, Pepper, and Sausage Bake

10 medium red potatoes diced
10-15 mini sweet peppers
1 medium onion diced
1 Kielbasa or Sausage of choice
1/2 cup olive oil
2 Tbs lemon juice
3 Tbs Rosemary Garlic seasoning

Wash, peel (optional), and dice potatoes
Cut up sweet peppers, and onions
Slice Kielbasa into rounds
Mix oil, lemon juice, and in large bowl
Add potatoes and onions, coat thoroughly
Spoon into baking sheet or
Bake at 500 for 30 mins, stirring every 10 mins
After 30 mins, add sausage and sweet peppers
Bake at 500 for 15 mins
Serve immediately or cool and freeze

To eat from frozen, thaw, reheat at 450 for 15 mins
