Bacon Cauliflower Casserole


Makes 6 servings

1 large – Cauliflower
8 oz – Cream Cheese
1/2 cup – Sour Cream
1 cup – Cheddar Cheese
1 cup – Mozzarella Cheese
1/2 small – Onion
6 strip – Bacon
1/2 cup – Green Onion
2 tsp – Garlic Powder
2 tsp – Paprika
to taste – Salt and Pepper
as needed – Cooking Oil Spray


Place a pot with water over medium heat and cook cauliflower florets for 10 minutes or until tender. Drain water and set aside.
Cook bacon to desired liking; cool, chop and set bacon aside.
Preheat oven to 400°F degrees and grease a baking dish with oil spray.
In a bowl, mix cream cheese, sour cream, cheddar cheese, mozzarella cheese, chopped onion, garlic powder and paprika until combined. Salt and pepper to taste.
Stir in cauliflower, 1/2 of the bacon and 1/2 of the green onion.
Add mixture to prepared casserole dish and top with remaining bacon.
Bake for 20-25 minutes or until the cheese is melted.
Garnish with the remaining green onion.
