Shrimp Masala

– 2 lbs raw shrimp (peeled and deveined)
– 2 cups chopped roma tomatoes
– 1 1/2 teaspoons paprika
– 1 teaspoon salt
– 1/2 teaspoon ground cumin
– 1/2 teaspoon ground coriander
– 1/4 teaspoon ground turmeric
– 1 tablespoon olive oil
– 1 teaspoon ginger garlic paste (2 parts garlic, 1 part ginger)
– 2 teaspoons lime juice
– 1/3 cup chopped fresh cilantro for garnish

– Combine paprika, salt, cumin, coriander and turmeric in a small bowl. Heat oil in a small skillet over medium heat. Add ginger garlic paste and let it cook for a few seconds, then add spice mixture and chopped tomatoes and cook, stirring until tomatoes are fully cooked, and the curry is sizzling and fragrant
– Add shrimps to the curry and cook until nice and juicy (don’t overcook the shrimp)
– Add lemon juice, stir and garnish with chopped cilantro. Serve with cauliflower rice (2 greens)!
