3 – 4 boneless skinless chicken breasts, cooked and shredded
1 medium head cauliflower
2 – 3 stalks green onions
2 garlic cloves minced
3/4 cup shredded colby jack cheese
1 cup shredded sharp cheddar cheese
3 T bacon bits or 6 to 8 pieces of bacon, cooked and crumbled.
Break cauliflower apart and steam. Preheat oven to 350. Mix cheeses together in a large bowl (taking out 1/4 cup and setting it aside). Slice your green onions and then mix everything together in with the cheese. Put in a 9×13 baking dish and top with the remaining cheese. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 5 minutes.
