Lobster Rolls


Ingredients:

4 split-top buns
1 pound cooked lobster meat, chopped
1/4 cup mayonnaise
1 tablespoon fresh lemon juice
1 tablespoon chopped chives
Salt and pepper to taste
2 tablespoons butter, melted
Directions:

In a bowl, mix together the lobster meat, mayonnaise, lemon juice, chives, salt, and pepper.
Brush the inside of each bun with melted butter and toast until golden.
Generously fill each toasted bun with the lobster mixture.
Serve immediately, accompanied by potato chips or a light salad.
